In the past, the rhythm of the mountains was set by what the land offered each season. The chestnut did not only feed people — it was also a key part of raising pigs. It was a coherent, natural practice, free of artifice, that made circular use of the resources of the surrounding land.

With La Castanyissa, we recover this knowledge:
