Caramelised chestnuts are a traditional, surprisingly simple recipe that turns the chestnut into a small, irresistible sweet bite, perfect for sharing at the Castanyada or enjoying as an autumn treat.

STEP 1

Score the chestnuts and leave them to soak for 10 minutes.

STEP 2

Without changing containers, cover them with water and microwave on full power for 10 minutes.

STEP 3

Once they've cooled slightly, peel them. Then place them in a pot with the honey, sugar and cinnamon, and let them simmer gently for 2 minutes.

STEP 4

Remove from the heat and let cool. Put the pot back on the heat for another 2 minutes. Repeat this process twice so the chestnuts absorb the caramel well.

STEP 5

Once cooking is finished, let the chestnuts cool. Finally, lightly fry them in a pan with extra virgin olive oil until nicely golden.
