Score the chestnuts and leave them to soak for 10 minutes.
Without changing containers, cover them with water and microwave on full power for 10 minutes.
Once they've cooled slightly, peel them. Then place them in a pot with the honey, sugar and cinnamon, and let them simmer gently for 2 minutes.
Remove from the heat and let cool. Put the pot back on the heat for another 2 minutes. Repeat this process twice so the chestnuts absorb the caramel well.
Once cooking is finished, let the chestnuts cool. Finally, lightly fry them in a pan with extra virgin olive oil until nicely golden.
