A simple technique that helps bring dried preparations back to life and gives them a second chance without losing the character of Viladrau chestnuts.

STEP 1

Mix the crumbled roasted chestnut with a little warm water until it regains elasticity. Let the mixture rest for a few minutes so it absorbs the moisture without falling apart.

STEP 2

Add the chestnut flour little by little and work the dough or base gently. The goal is a more tender, even texture to fold into the final recipe.

STEP 3

Adjust with a pinch of salt and finish it off depending on whether you'll use it in savoury dishes, fillings or creams. This base lets you make the most of your preparations while keeping the aroma of the Montseny.
