A recipe that fits naturally with local cooking and a way of understanding produce that lets nothing go to waste.

STEP 1

Bring back yesterday's cooked chestnuts and crumble them lightly. This uneven texture gives character to the final recipe.

STEP 2

Prepare a base with onion confit and add the chestnut and a small amount of flour to bind the mixture.

STEP 3

Shape or finish it however the dish calls for: as a filling, sautéed, as a tart base or as a side.
