SORTING AND PREPARATION

A guide to starting any recipe off right: selecting, cleaning and preparing the chestnut before cooking it.

Before any preparation begins, there's work of hands and eyes that shapes the final result.

STEP 1

Check the chestnuts one by one and set aside any with bruises or holes. Good sorting saves trouble throughout the rest of the cooking.

STEP 2

Wash them and let them dry on a cloth before cutting or blanching them. This preparation allows for more even cooking.

STEP 3

Sort them by size or culinary purpose to work with more precision, especially if you're handling large batches or several recipes at once.
